I think you have more fun and get to know people better by doing things together--and if the date doesn't go well, you've at least had something else to enjoy. I'm terrible at bowling but enjoy it (I'm fine with your standard-issue alley, but Lucky Strike downtown has a more date-like atmosphere), maybe a cooking class at a place like Sur La Table, or in cooler weather, the Desert Botanical Garden or the zoo.

Make sure what you've picked out and/or suggested has some relevance to what this person might actually enjoy. Doing something you both enjoy will go a long way towards relationship building.
